A large advantage of commercial gas pizza ovens is the fact they are much easier to use. Operating by turning the gas source on and off, and without having to collect and keep an eye on restocking your heat source (as with wood), gas pizza ovens are much easier to handle in a fast-paced commercial kitchen. Moreover, this lack of maintenance frees up staff from having to watch over a wood-fired pizza oven. And when the dinner shift is done, gas pizza ovens make a lot less mess than wood-fired (which produces ash and soot), meaning cleaning up is much quicker. Gas ovens preheat faster, too, and their overall temperature is easier to maintain and control which is suitable for a kitchen that doesn’t have the time to monitor a wood-fired oven. However, being a gas kitchen appliance, gas pizza ovens do have to be installed by a gas appliance engineer.
On the other hand, wood-fired pizza ovens are the most authentic way of making your pizzas. Burning wood as their heat source, wood-fired pizza ovens produce smoke that uniquely flavours your pizza. They also have quicker cooking times versus the gas pizza oven, despite their preheating time being slower. With an open flame, wood-fired pizza ovens can create a hotter cooking environment, and overall need a lot more maintenance whilst functioning than gas pizza ovens.
If your commercial kitchen is fast-paced, happy to produce good quality pizzas, yet without that distinct smoky flavour, then the gas pizza oven is the one for you. Alternatively, if you can afford to invest the time and energy into a wood-fired pizza oven to produce a more authentic pizza, then wood-fired is the way to go.
