Ice Cold Slush Machines
Commercial slush machines, also known as granita machines, were invented in 1960's and became an instant hit by mixing flavoured syrup with water. Today, commercial slush machines can be found in convenience stores, quick-service restaurants, cafes within entertainment venues, bars, and concession stands.
The slush machine is composed of three primary parts: a container for the liquid, the freezing chamber, and the mechanism to move the liquid between the container and the freezing chamber.
Slush machines work by pumping ice, water, and flavourings - such as syrup - from a container at room temperature to a cylindrical chamber, where it undergoes a freezing process, caused by a refrigerant (cold gas) inside of the chamber. Sugar prevents the mixture from freezing completely, as the machine mixes and churns the remaining icy liquid, which exits the machine as a slush.
