    What is a refrigerated display unit?

    A refrigerated display unit can encompass many different types of display refrigeration – an appealing way of keeping food both fresh and cool whilst showing off produce to attract customers. Refrigerated display units give you control over how your produce is presented, allowing you to highlight certain produce through lighting and presentation, which can be great for encouraging sales.

    At least one side of a refrigerated display unit will be made of glass to ensure the customer can see what is on display. This moreover means the customers can browse and pick the produce they want without having to open the fridge doors or handle food – both hygienic and great for minimising your energy consumption.

    It is common for refrigerated display units to have doors that can be accessed by a server behind the counter, such as those found in butchers, bakeries, and delis, to facilitate a smooth and refined customer experience.

    How do display fridges work?

    Refrigerated display counters operate by a refrigeration system – the same way any other fridge works. The central part of the refrigeration system is a condenser, which emits heat (energy) outside the unit.

    This conversion takes place through three main components: an electric motor that drives the compressor; the compressor is what makes the refrigerant flow, pushing it into coils inside of the refrigerator where it becomes cold and absorbs heat from food; a suction line brings the evaporated refrigerant to the compressor. Afterward, it is pushed into a condenser where heat is released both outside and inside of the refrigerator.

    And just like its other refrigeration counterparts, the FSA recommends chilled display equipment be set at 5 degrees Celsius or below to prevent harmful bacteria growing on food.

    What are the different types of refrigerated display units?

    There are multiple types of refrigerated display, and the type of unit used by commercial kitchens is dependent on the nature of the business.

    Upright Refrigeration Display Units – these refrigeration display cases typically hold packaged meats, deli items, and dairy products. Within a busy commercial kitchen, they allow for organised display and easy access of products, whilst for commercial use they can encourage the purchasing of items.

    Serve Over Counter Display Units - the serve over counter display unit is similar to the upright refrigeration display units in that they hold packaged meats, deli items such as pre-cooked or pre-packaged sandwiches, dairy products, and can also hold desserts such as cakes. However, these refrigerated display units are typically behind a counter with an opening for customers or servers to reach into to pick up products - this of course depends on location and the type of service offered by the business.

    Beer Refrigeration and Wine Coolers – these refrigeration display cases can be countertop or freestanding, depending on the amount of beverage sold by the commercial catering business. Beer refrigerators and wine coolers are typically found in restaurants, shops, or catering businesses.

    Open Display Refrigerators - the open display refrigeration unit is different from the other types of refrigerated display units because it does not include a glass door; rather open display refrigerators are wide and often used for showcasing produce (fruits and vegetables). Open display refrigerators do not operate through a typical refrigeration system, as it is not an enclosed unit, but instead circulates cold air through natural convection and grills which push out the cold air.
