- Food hygiene and sanitisation: food should be kept clean, stored safely under the necessary temperature and packaged and labelled correctly. Raw meats should not come into contact with ready-to-eat foods, and when cooked, cooked thoroughly to remove any bacteria. Food preparation areas should be disinfected regularly, and hands also washed regularly.

- Food waste: food waste should be disposed of quickly and correctly by way of waste bins, without allowing build up - which could encourage pests. Fats, oils, and grease should not be disposed of down a sink or drain, but in the bin. Bins or waste containers should be kept closed and cleaned regularly, away from the reach of pests.

- Ventilation: ventilation is essential for removing vapours and maintaining a cooler temperature in your kitchen. This can be done by a canopy hood or hooded fan over cooking appliances.

- Health and safety: a health and safety policy should be drawn up and adhered to. Spillage should be cleaned up as soon as possible, with signs for slips and trips used accordingly.

- Fire safety: a fire risk assessment must be made, with safety measures and an emergency plan drawn up and adhered to. Safety equipment such as alarms, fire doors, and fire exit signs, should be correctly installed and regularly tested.

- Gas safety: gas equipment must be CE marked, and installation/ repairs must be carried out by a Gas Safe Registered engineer. Annual inspections by a Gas Safe Registered engineer are recommended.
