    Is Induction Cooking better than Electric?

    Induction cooking is another form of kitchen equipment that uses electricity – as opposed to another source of energy, such as gas. However, induction cooktops are not the same as electric cooktops, and choosing between the two can often be tricky.

    The main difference between the two is the way in which they heat your food. Electric cooktops heat through a centralised heat source – sending an electric current through metal coils underneath the glass or ceramic surface of the cooker. Thermal conduction is then used to heat the surface, which heats your pots and pans, before cooking the food inside.

    Induction cookers, on the other hand, use copper coils to heat your pots and pans directly through a magnetic current. This innovative cooking solution is far quicker than its electric counterpart, since it does not have to heat the cooktop surface to transfer heat. In the same vein, since the cooktop does not get hot, an induction cooker is a lot safer and easier to clean.

    Best of all, induction cookers require far less energy to heat than gas or electric – saving your commercial kitchen money in the long run. However, initial purchasing costs for a commercial induction cooker are steep – one great disadvantage.

    Moreover, the cookware used on induction cookers have to be ferromagnetic – they must be made from a material that acts as a magnet in order to successfully attract the heat.

    Whilst induction cookers are great for commercial kitchen use due to their cooking times and convenience which surpasses their electric and gas counterparts, their cost is one reason they are not yet the obvious choice for all kitchens.

    Do induction stoves break easily?

    Induction stoves are designed to withstand everyday use. That being said, induction stoves have a glass-ceramic surface which are more susceptible to scratching or cracking than other types of industrial ovens. They are also vulnerable to the same common issues faced by most kitchen appliances, such as not turning on or making funny noises.

    Commercial induction stoves are built to last longer than ones meant for the domestic environment, however, and with the right care and maintenance will last around 8 years.

    What material works on induction?

    Induction cooking works by electromagnetism, and therefore needs a magnetic material in order to conduct heat. Magnetic cookware includes iron or iron-based metals, like steel and some stainless steels. This includes non-stick pans, as long as they are made from a magnetic material.

    Induction cookware will be marked with a coil symbol, proving it is compatible with an induction cooktop. Another way to find out if your favourite pan is magnetic is to simply place a magnet on the bottom of the pan and see if it sticks.
